Ciabot Colli Tortonesi DOC Timorasso

The so-called “White Barolo.” Once nearly lost, this noble grape now reclaims its place among the finest tables. From a vineyard embraced by woods and bathed in southern light, it reveals a poised complexity, gently shaped by patient aging in oak.

Production area: Colli Tortonessi, a gentle, quiet land nestled between Piedmont and Liguria, where rolling hills flow like waves of earth. The Colli Tortonesi are a mosaic of vineyards, woods, and fields, caressed by sea breezes that soften the climate and lend the wines their elegance and freshness.
The soils, rich in calcareous marl and clay, hold extraordinary biodiversity and impart a distinctive minerality to the wines. Here, unique treasures are born — among them Timorasso, an indigenous grape revived through the passion of a few visionaries, alongside other varieties that speak sincerely of this land’s soul.
An authentic landscape where tradition and innovation coexist, and where every row of vines tells a story of patience, light, and memory.

Grape variety: 100% Timorasso

Alcohol content: 13,50%

Aging: 3 months in stainless steel, 12 months in large oak casks, and a final 3 months in bottle, allowing the wine’s complexity and elegance to fully unfold

Description

Tasting notes: A gentle, softly luminous straw yellow, this wine opens with the charm of its varietal character, delicate whispers of acacia blossoms dancing in the air. On the palate, it is fresh and lively, with a graceful sapidity that carries the wine forward, revealing an elegance that lingers and inspires.

Serving temperature: Serve at 12-14 °C to fully reveal its aromas and expressive character

Food pairing: Timorasso pairs beautifully with a wide range of dishes, thanks to its structure and sapidity. It complements everything from antipasti of cured meats and cheeses to more complex preparations such as baked fish, shellfish, white meats, and mushrooms. It is also perfect as an aperitif wine and pairs wonderfully with spiced or fusion dishes, as well as with truffle-based creations.
