Veneto IGT Passito Rosso
A blend of non-native grapes with an intense aroma and
persistent of red berried fruits, velvety but sugar-free
Production area: Pescantina
Grapes: Merlot, Rebo, Dindarella, Ancellotta,
Sangiovese, Pinot Nero
Production: after harvesting the grapes are left to dry in
well-ventilated places in wooden boxes, until January, then
crushed and de-stemmed. Fermentation with maceration on the
skins, handling and breaking of the pomace cap
automatic.
Aging: 12 months in steel, followed by 24 months in barrels and
Slavonian oak and cherry tonneaux and a few months in the bottle
Sugar residue: 5-6 gr / l.
Alcohol content: 16.0%
Service: to be poured into large glasses at a temperature of 17 ° C
Pairings: meat with fruit, cheeses aged in marc,
cheese cake and chops with berries
