Aging: 24 months in large 50-hL oak casks, where it develops depth and complexity, before spending a further minimum of 12 months in stainless-steel tanks prior to bottling

Description

Tasting notes: Garnet red in colour, evolving towards delicate orange hues with age. The bouquet is intense and complex, revealing red fruits in preserve, plum and currant, followed by elegant floral notes of dried rose and violet, and deeper nuances of spices, liquorice and woodland. On the palate, it is enveloping and refined, with remarkable length and silky, harmonious tannins. Its well-balanced warmth is lifted by a striking freshness, a hallmark of its exceptional ageing potential

Serving temperature: Best served at 16–18 °C to fully appreciate its aromas and character

Food pairing: A classic match for rich and succulent dishes such as game, premium grilled meats, hearty stews and traditional boiled meats. Perfect with cured meats, it also pairs beautifully with intensely aromatic creations, including truffle dishes, liver and aged sheep’s cheeses
